Authentic Sicilian Pizza Sauce

Real Sicilian pizza is something that is hard to find, but it is worth it when you get it. Part of the secret is in the sauce. Sicilian pizza uses a delicious and relatively simple sauce with a lot of anchovies and sometimes pecorino cheese, and the cheese is placed beneath the sauce.

Most of us are more familiar with Neapolitan pizza, so this looks a little odd. Sometimes, toppings are baked right into the crust itself. Here is a Sicilian pizza sauce that will help you put together the perfect pie.

Sicilian Pizza Sauce at Home

Ingredients –

3 tablespoons olive oil
2 large cloves garlic, minced
2 tablespoons tomato paste
1 twenty-eight ounce can crushed tomatoes
½ anchovy, minced
salt and ground black pepper to taste

Preparation:

Heat oil in a medium saucepan and sauté garlic.

Add tomato paste and anchovy and cook three minutes, then add tomatoes and simmer.

Crush tomatoes with the back of the spoon, simmering until extremely thick – about forty-five minutes.

Season with pepper and salt to taste.

Cool and use to sauce pizza right away, refrigerate for up to a week, or freeze for later use.

(Makes 2 ½ cups, or sauce for 3 to 5 pizzas)
