Chilled Cream Cheese Vegetable Pizza
This cream cheese vegetable pizza recipe is perfect for vegetarians or for anyone who fancies a meat-free meal. Cream cheese, mayonnaise and ranch dressing are combined as a pizza sauce for this vegetarian pizza and lightly cooked cauliflower, broccoli, corn, bell pepper and tomatoes are used as the topping to result in healthy as well as delicious vegetable pizza recipe.
Being a chilled pizza, this one is designed to be eaten cold but if you prefer, you can serve it when the crust is still warm from the oven and the vegetables are warm from being stir-fried. Do not spread the topping on a hot crust though else it will go soggy.
A Healthy Vegetarian Pizza Recipe
8 oz softened cream cheese
1 cup mayonnaise
16 oz pizza dough
1 oz dry Ranch-style dressing mix
1 cup shredded carrots
1 cup chopped cauliflower
1 cup shredded Cheddar cheese
1 cup fresh broccoli, chopped
1 cup chopped tomatoes
½ cup corn kernels
1 cup chopped green bell pepper
Preheat oven to 375 degrees F.
Roll out dough to fit a 9 by 13 inch baking sheet. Pinch the edges to form the crust. Bake 12 minutes then cool for 15 minutes still in the baking sheet.
Stir-fry the cauliflower, broccoli, carrot, and bell pepper for 3 minutes in the cooking spray over a medium heat.
Combine the cream cheese, Ranch dressing, and mayonnaise and spread this over the cooled crust.
Arrange the vegetables and cheese on top.
Chill for an hour, slice, and serve.
