Grilled Vegetable Pita Pizza
This vegetarian pita bread recipe combines two great favorites – grilling and pizza. It is a wonderful Greek style pizza that is simple and easy to make. Just use the vegetables you have around the house and some of your favorite pita bread, put together, and warm it up on the grill outside. If you want to produce a quick and easy appetizer, or a great main course, this pita pizza is a wonderful choice.
Choose a softer pita, instead of some of the leatherier types, for the best results, and don’t over grill, or the pizza may become tough. Switch the vegetables around and choose whatever you have on hand or whatever you prefer. It is amazing what you can do with simple ingredients like this. Vegetable Pizza on Pita Bread
4 pieces pita bread
1 cup tomatoes, seeded and diced
½ cup red onion, diced
¼ cup feta cheese, crumbled
¼ cup mozzarella cheese, shredded
4 tablespoons extra virgin olive oil
2 tablespoons fresh mint, finely chopped
Preheat grill to medium high.
In a medium bowl, combine tomatoes, onion, mint, and 2 tablespoons of the olive oil. Brush remaining olive oil onto pita bread on both sides.
Set bread on grill grate and cook for 2 minutes.
Turn pita pieces over and top with tomato-herb mixture, then cheese. Cover grill and cook for two to three additional minutes. Remove from heat and serve.
