Healthy Fresh Fruit Pizza Recipe

Ingredients –

For the Cookie Crust:

½ cup sugar
½ cup butter
1 egg
2 teaspoons baking powder
2 cups all purpose flour
1 teaspoon vanilla extract

For the Cheese Spread:

1 teaspoon vanilla extract
8 oz cream cheese
½ cup sugar

For the Topping:

Sliced fruits such as:
strawberries
banana
kiwi
mandarin
pineapple
blueberries
grapes
peach or pear

Preparation:

Preheat the oven to 375 degrees F.

To make the crust, cream the sugar, egg, vanilla and butter until fluffy and light. Add the baking powder and flour and mix well.

Spread this mixture into a pizza pan or on to a baking sheet. Bake for 10 to 12 minutes or until golden. Allow to cool.

Combine the sugar, vanilla, and cream cheese and spread this mixture on the crust.

Arrange the fruit on top and cover.

Refrigerate for 2 hours.
