Baked Potato Pizza Recipes

Potato Pizza with Summer Vegetables
Ingredients –
1 thinly sliced onion
6 oz firm tofu, crumbled
2 tablespoons olive oil
4 shredded potatoes
2 beaten eggs
1 grated onion
2 minced cloves garlic
1 thinly sliced zucchini
¼ cup all purpose flour
2 tablespoons chopped fresh basil
1 thinly sliced yellow squash
1 cup shredded mozzarella
½ cup tomato sauce
1 chopped green bell pepper
2 sliced tomatoes
Nonstick cooking spray
Preparation:
Preheat the oven to 425 degrees F.
Grease a baking dish or 12 inch pizza pan with cooking spray.
Mix the shredded onion with the potatoes, flour and eggs.
Press this mixture into the baking dish or pizza pan.
Bake for about 15 minutes. Spray cooking oil on the top and bake for 10 minutes more.
Broil for 3 minutes until crisp and golden.
Take the crust out of the oven.
Mix the yellow squash, zucchini, sliced onion, tofu, garlic and green bell pepper together.
Sauté this mixture in a skillet until the vegetables are just tender.
Mix the basil and tomato sauce and spread half of this over the pizza crust.
Arrange the sliced tomatoes and sautéed vegetables over this, and then spoon the rest of the sauce over the top.
Sprinkle the mozzarella over the top and bake for 8 minutes or until the cheese melts.
