Taco Pizza Recipe
Ingredients –
½ lb pork sausage
1 ¼ cups cornmeal
2 cups chopped lettuce
½ cup sliced olives
¾ cup water
⅔ cup milk
1 ½ teaspoons salt
1 cup shredded Monterey Jack cheese
2 teaspoons baking powder
14 ½ oz can diced tomatoes in juice
1 envelope taco seasoning mix
1 ¼ cups all purpose flour
1 ½ cups shredded cheddar
½ cup sliced green onions
1 cup diced fresh tomatoes
6 oz tomato paste
⅓ cup melted butter
Preparation:
Preheat the oven to 400 degrees F.
Mix together the salt, baking powder, cornmeal and flour.
Add the milk and blend well.
Press this mixture over the sides and base of a 14 x 12 inch baking pan.
Bake for 10 minutes then let it cool.
Brown the sausage and beef in a skillet and drain off the fat.
Stir in the water, taco seasoning, canned tomatoes and tomato paste and bring the mixture to a boil.
Let it simmer for 5 minutes without a cover. Spread this mixture over the pizza crust.
Mix the cheddar with the Monterey Jack cheese and sprinkle 2 cups of this cheese mixture over the pizza.
Bake it for 15 minutes or until the cheese has melted.
Top the pizza with the fresh tomato, olives, onions, lettuce and the last bit of cheese.
