Casserole Style Mexican Pizza Recipe

This pizza casserole recipe contains cheese, tomatoes, rice, beef, and vegetables and has a pizza crust on top with a garnish of olives, tomatoes, and cheese. This pizza casserole is very filling and satisfying and can be served by itself. Some Mexican pizza recipes use tortillas rather than pizza dough but this one uses pizza dough for a crunchy topping.
Pizza Casserole Recipes
10 oz pizza dough
2 cups shredded Monterey Jack cheese
2 cans Mexican style tomatoes, not drained
1 ½ cups cooked white rice
1 lb ground beef
1 chopped green bell pepper
2/3 cup water
1 chopped onion
Sliced black olives, chopped tomatoes and sour cream for garnish
Preheat the oven to 425 degrees F and spray a 13 by 9 inch baking pan with cooking spray.
Set aside. Spray a non-stick skillet with cooking spray and heat it over a high heat. Sauté the beef, bell pepper, and onion, stirring, for 5 minutes or until the meat is brown.
Add tomatoes, rice, and 2/3-cup water. Bring to the boil and pour this mixture into the prepared baking dish.
Cut eight slits in the dough and arrange it on top.
Bake 10 minutes or until the crust is browned. Sprinkle the rest of the cheese on top and bake for 5 minutes more.
Stand for 5 minutes then add the garnish ingredients, slice, and serve.
