Shrimp Pizza with Red Wine Marinade

If you love to cook and are looking for something a little different for a special occasion, this pizza is for you. Most tomato pizza recipes boil down to the same old thing, but this one features delicious prawns in a red wine marinade, and is not your run of the mill cheese or chicken pie. However, even though this is a great gourmet pizza recipe, it does not have to be hard to make.

It is even relatively expensive, with the low cost for taste value offered by prawns and red wine. Expand your horizons a little bit with this great, slightly unusual recipe for gourmet pizza. Try it along with a chardonnay for best effect.

Grilled Marinated Prawn Tomato Pizza

Ingredients –

Marinade

½ clove garlic, minced
3 tablespoons extra virgin olive oil
2 teaspoons tomato sauce
1 teaspoon red wine
1 teaspoon fresh basil, chopped
pinch salt
pinch cayenne pepper

5 ounces fresh prawns or shrimp, peeled and deveined

1 premade pizza crust
1 fresh ripe tomato, sliced
1 cup mozzarella cheese, shredded
¼ cup parmesan cheese

Preparation:

Combine garlic, olive oil, red wine and tomato sauce, then season with salt, cayenne, and basil. Add prawns and stir until coated evenly. Cover and refrigerate for thirty minutes to an hour.

Preheat grill to medium. Thread prawns onto skewers, piercing once near the head and once near the tail. Discard unneeded marinade. Oil grill grate lightly and cook shrimp two to three minutes per side.

Place pizza crust on hot grill and cover, cooking until bottom has browned. Turn onto cookie sheet or pizza pan browned side up, and then add prawns, ripe tomato, and cheeses. Return to grill and cook until bottom of pizza is brown and cheese has melted and is bubbling.
