Roasted Vegetable Pizza on the Grill

Grilled Pizza with Roasted Vegetables
Ingredients –
2 tablespoons olive oil
1 clove garlic, minced
1 sweet red pepper, chopped
4 slices sweet red onion
1 medium zucchini, chopped
1 medium yellow squash, chopped
1 cup pizza sauce
2 ten inch pizza crusts, pre-cooked
1 cup mozzarella cheese, shredded
Preparation:
In a small bowl, combine garlic and olive oil.
Brush over vegetables and roll into aluminum foil.
Place on grill for ten minutes, or until cooked through.
Turn packet part way through grilling to cook evenly.
Remove from grill, allow to cool, and open packet.
Top crusts with pizza sauce, roasted vegetables and cheese.
Place pizzas on grill one at a time.
Cover and grill five to six minutes over low to medium heat, until crust is hot and cheese has melted.
Cut into wedges and serve hot.
