Grilled Pizza the Hawaiian Way

Ingredients –

1 pizza crust
1 teaspoon vegetable oil
½ pound boneless, skinless chicken, cut into pieces
1 clove garlic, chopped
1-½ teaspoons fresh ginger, chopped
⅓ cup barbecue sauce
½ cup pineapple chunks
¼ cup green onion, sliced
1 small bell red pepper, sliced into thin strips
1 small bell yellow pepper, sliced into thin strips
1 cup mozzarella cheese, shredded
⅓ cup macadamia nuts, halved
Basil leaves

Preparation:

Heat your grill to medium heat. Roll out your pizza crust.

Heat oil in a frying pan and sauté the chicken with ginger and garlic until chicken is no longer pink. Do not let the garlic or ginger get brown.

Place the crust on the grill for a minute or two so it just starts to brown. Flip it over for another minute, and then remove it from the grill.

Apply barbecue sauce to the crust with a pastry brush. Top the pizza with the cooked chicken, pineapple, peppers, onion, and cheese.

Return the pizza to the grill for 5 to 10 minutes to finish cooking. During the last few minutes on the grill, add the macadamia nuts to the top of the pizza. Scatter basil leaves on top after the pizza has been removed from the heat.

Serve immediately.
