Grilled Chicken Pizza with Barbecue Pita
This grilled chicken pizza makes a great change from a regular chicken pizza because pita bread is used rather than traditional pizza dough. Bacon bits, onion, bell pepper, mushroom and barbecue sauce combine wonderfully in this barbeque chicken pizza recipe to result in a very tasty pizza for the whole family to enjoy.
Melted cheese finishes it off perfectly. This grilled chicken pizza recipe is extremely easy to make and only needs to bake for ten minutes so if you are in a hurry but fancy a really tasty dinner, this is a great pizza recipe to try and one which is very healthy too.
Barbecue Chicken Pita Pizzas
Ingredients –
2 boneless chicken breasts
1 green bell pepper, cut julienne
½ cup BBQ sauce
4 pita breads
1 tablespoon olive oil
4 oz can chopped green chilies
1 cup shredded cheddar
4 oz can chopped mushrooms
⅓ cup real bacon bits
1 onion, halved and sliced thinly
Preparation:
Preheat the grill to a moderate heat.
Rub the olive oil over the chicken.
Sear it for a couple of minutes on each side on the grill, and then rub ⅔ of the BBQ sauce over it.
Keep cooking the chicken until the juices run clear from the thickest part of it.
Cut it into pieces.
Spread the rest of the BBQ sauce over the pita breads, and then add the chicken, onion, bell pepper, bacon, mushrooms, chilies and cheddar.
Put the pizzas on an ungreased grill rack and cook for about 8 minutes over a low flame until the vegetables are still crisp but tender and the cheese has melted.
You can cut each pizza into 4 to make 16 appetizer-sized portions if you like, or leave them whole for entrees.
